Cilantro Lime Dressing

Ingredients
1 bunch of Fresh Cilantro
5 Limes (2 zested, all 5 for juice)
3 Thai Chilies
2 tablespoons Fresh Ginger
3 tablespoons Sesame Seeds
1 medium Shallot
2 cups Magical Olive Oil
2 tablespoons Toasted Sesame Oil
½ cup Rice Wine Vinegar
2 tablespoons Dijon
Salt to Taste
Directions
Peel ginger and then wash the cilantro, limes, and chilies. Roughly chop ginger, chilies, and cilantro.
Julienne the shallot and zest two limes.
Add olive oil, toasted sesame oil, ginger, chilies, lime, and shallot into the MagicalButter Machine. Cook at 160° Fahrenheit for 2 hours.
Juice ½ cup of fresh lime juice, about 5 whole limes.
Add lime juice, rice wine vinegar, cilantro, and sesame seeds into the MagicalButter Machine. Run four blend cycles. (About 20 minutes with no heat)
Transfer dressing to a bowl and refrigerate for an hour until cooled. Serve with salad, chips, and more!
